cold brewed iced coffee

so a few weeks back i found this recipe for something called cold brewed iced coffee...basically coffee brewed all night in cold water...
now me being the coffee fan that i am...couldn't resist, but with restrictions because of Myka's diet, i used decaf and it was extremely mild...still a surprisingly good treat, and very different then the normal iced coffee...
so i thought i'd pass it on. let me know what you think.

Recipe: Cold-Brewed ICED COFFEE
Time: 5 minutes, plus 12 hours' resting

1/3 cup ground coffee (medium-coarse grind is best) Milk (optional).

1. In a jar, stir together coffee and 1 1/2 cups water. Cover and let rest at room temperature overnight or 12 hours.
2. Strain twice through a coffee filter, a fine-mesh sieve or a sieve lined with cheesecloth. In a tall glass filled with ice, mix equal parts coffee concentrate and water, or to taste. If desired, add milk.

Yield: Two drinks.

and i strained it in my french press, and it worked fine.

shabu shabu

so we've been trying to get together with our great friends Dani and Michelle for too long...Dani graduated and they are heading home in a few sort weeks.
So when we finally set a date and Dani said he wanted to cook, we said yes.
but were totally shocked when they showed up with this spread...

and then they shared that this is a traditional Japanese dish shared with family and close friends. we were so blessed and had a great family dinner.
this is how our food cooked...it was delicious!

Dani and Michelle...we will miss you very much. Your friendship has been very special to both Matt and I, and your kindness and thoughtfulness for other people has taught us a lot. We wish you both the very best in all that God has next for you!
